On Saturdays, I usually have the last portion of the organic ingredients I get from the Farmer’s market. Sometimes, I end up making smoothies out of them and sometimes I make a hodgepodge breakfast. This is just one of them.
QUINOA MISH MASH
1 cup cooked quinoa (seasoned with turmeric and other spices)
1/4 cup onion
1/2 tsp minced garlic
1 small red pepper, sliced
1 eggplant, sliced
1/2 cup mushrooms
1 leaf fresh basil, sliced
3 slices turkey
1 handful spinach
1 Tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
1. Wash eggplants, sprinkle with salt and let sit for 10 minutes.
2. In a large skillet, heat olive oil and place eggplant. Turn over after 2 mins. Add garlic, onions, mushrooms, bell pepper***.Cook for 5 mins.
3. In a separate medium skillet, cook eggs sunny side up in high heat.
4. Add cooked quinoa, spinach and basil. Cook for another 2 minutes. Add eggs on top of quinoa mish mash. ENJOY!!!
